My family has been dairy free for ten years. I grew up consuming animal dairy products. Cheese and yogurt were my favorite snacks. Over the past decade I have tried many dairy free yogurts. They were either poor in taste and texture, or both. Although, we eventually found a few that we enjoy the cost is not budget friendly. Two dollars a serving for a family of four means it can only be an occasional treat. Over the past two years I have tried many homemade recipes to no avail. That is until now. I stumbled upon this recipe in a medical office playing on the patient information tablet. It seemed almost to good to be true. To my surprise it turned out amazing with a thick custard like texture that I love. Just add a little raw honey or maple syrup to taste and you have an amazing healthy yogurt to enjoy. I made a bulk batch times four.

4 Cans Full Fat Coconut Milk
4 Tsp of Agar Flakes
6 Capsules of Probiotic Capsules
*On the stove top heat the coconut milk to a medium simmer. Add the agar flakes or granules sprinkling while whisking. Continue to whisk periodically allowing the agar to completely dissolve. Remove from heat and let set until the temperature is 98-100 degrees F. Open probiotic capsules and sprinkle across mixture in a large glass bowl. Whisk to combine.
Place in jars and set in oven that has been warmed to 100 degrees. Turn oven off and leave yogurt in the oven overnight. Set in the refrigerator to cool. Enjoy !
