The Joy of Soup


Do you enjoy soup? There so many benefits to soup. Soup can be eaten at anytime, during any season. Cold or hot. Create your own or explore delicious soups from around the world. Soup is hydrating, budget friendly, good for your digestion, and nutrient dense. Furthermore, they freeze well and go alongside just about everything. What is your favorite soup? I am a big fan of Hungarian Mushroom. Here is the recipe for my quick ten minute version with additional healing herbs. Enjoy!

Hungarian Mushroom Soup


Ingredients One pint of mushrooms of choice

One container of broth of choice

1/2 chopped onion

2-3 cloves of chopped garlic

Smoked Hungarian paprika

Chopped Nettles

Dry dill

Heavy Cream

White pepper

Pinch of sea salt

Olive oil


Instructions

Sautee the mushrooms, garlic, and onions with a little bit oil. Add broth and herbs to desired amount. Add heavy cream to desired consistency. Simmer for five minute. Enjoy!

Notes

This soup nutrient dense and stands alone for a small delightful meal. Serve with fresh bread, salad, or a healthy sandwich. It is low carb and vegetarian. Substitute vegan cream of choice to make vegan.
